Palate: Taught & crisp. Acid driven. Some lovely texture & grip from barrel work. Cumquat. Orange rind. Sesame. Finger lime.
A different approach to a conventional Riesling. We’ve chosen to balance the natural racy acidity of the variety not with sweetness, but with texture and mouthfeel.

2021 was a fabulous year for Riesling. It was our coolest year in a decade and produced one our most elegant Rieslings yet. Fruit came from the Nightingale vineyard, at a lofty 1100m ASL.
A naturally high-acid variety, Riesling thrives in our cool climate, particularly at such high-altitude. 2021 saw incredible natural acidity retention and intense aromatics.
We hand-picked our fruit into 10kg lugs on the 21st March 2021. They were chilled for 24hrs before being pressed as whole-clusters and then settled overnight. Racked with full solids in the juice to old 500L puncheons for ferment the next day. To balance some of the natural acid, we chose to wholly ferment in barrel in 2021 and gain as much textural mid-palate as possible from lees stirring. Ferment lasted 15 days before sulphuring the barrels. We stirred fortnightly for 3 months before blending the barrels in tank.
No fining agents were used. Lightly filtered. The wine remains completely dry.
