20% fermented in old barrels and lees stirred. 20% fermented on skins. Full solids, hot ferment.
Still a Riesling but with more dimensions.

Kaffir lime, kumquats and orange blossom jump from the glass. Intense and aromatic nose.
The palate is taut, dry and saline. Citrus dominates the flavours. The mid-palate builds with a slight creamed honey richness and texture increasing to a finish that has you rubbing your tongue on the roof of your mouth. Grainy. Refreshing.
